Job Purpose
The Pastry Chef is responsible for preparing, producing, and presenting a wide range of high-quality pastries, desserts, breads, cakes, and baked products. The role requires maintaining consistent food quality, presentation, hygiene, food safety, and cost-control standards while supporting the culinary team and meeting customer expectations.
Key Responsibilities
Pastry & Bakery Production
- Prepare and produce pastries, cakes, desserts, breads, and other baked products according to approved recipes and quality standards.
- Ensure all pastry products meet required standards for taste, texture, freshness, appearance, portion size, and presentation.
- Develop seasonal desserts, new menu items, promotional products, and special creations for events and functions.
- Follow recipes and production procedures to maintain consistency across all products.
- Work closely with the Head Chef and kitchen team to ensure smooth daily operations.
Production Planning & Food Cost Control
- Plan daily pastry production based on sales forecasts, reservations, events, and approved production levels.
- Monitor ingredient usage and maintain effective portion control to support food-cost objectives.
- Reduce food waste through accurate production planning, appropriate storage, stock rotation, and efficient ingredient utilization.
- Report unusual ingredient consumption, shortages, wastage, and inventory discrepancies to the Head Chef.
- Participate in stocktaking activities and provide accurate inventory information when required.
Inventory & Storage Management
- Check the quality, freshness, quantity, and condition of pastry ingredients before use.
- Ensure ingredients are correctly labelled, dated, stored, and handled.
- Follow FIFO and FEFO stock-rotation practices to maintain product quality and reduce spoilage.
- Maintain appropriate storage conditions for ingredients and finished pastry products.
- Prevent cross-contamination and product deterioration through proper handling and storage procedures.
Food Safety & Hygiene
- Follow food-safety policies, HACCP principles, allergen-control procedures, and workplace safety requirements.
- Maintain high standards of personal hygiene, grooming, cleanliness, and sanitation.
- Ensure pastry preparation areas, refrigerators, freezers, workstations, utensils, and equipment remain clean and organised.
- Handle ingredients and finished products safely in accordance with food-safety procedures.
- Report any food-safety, hygiene, equipment, or workplace hazards to the appropriate supervisor.
Equipment & Kitchen Operations
- Operate pastry and bakery equipment safely and efficiently.
- Use ovens, mixers, refrigerators, freezers, utensils, and other kitchen equipment according to approved procedures.
- Inspect equipment regularly and report faults, maintenance requirements, or safety concerns.
- Keep tools and equipment clean and in good working condition.
Teamwork & Staff Support
- Work effectively with the Head Chef, culinary team, service staff, and other departments.
- Coordinate pastry orders to ensure products are prepared accurately and delivered on time.
- Support the training and supervision of junior pastry team members when required.
- Participate in team meetings, daily briefings, training sessions, and company activities.
- Perform additional duties assigned by the Head Chef or management.
Required Experience & Skills
- Minimum 5 years of relevant pastry experience.
- Experience in a five-star hotel, premium bakery, upscale restaurant, or high-quality food-service environment is preferred.
- Professional culinary or pastry qualification is an advantage.
- Strong knowledge of pastry preparation, baking techniques, chocolate work, cake decoration, dessert presentation, storage, and preservation.
- Good understanding of food hygiene, HACCP, allergen management, and kitchen safety.
- Ability to follow standard recipes while maintaining consistent quality and portion control.
- Knowledge of production planning, stock management, food-cost control, and waste reduction.
- Creative approach to pastry and dessert development.
- Strong teamwork, communication, organisation, and time-management skills.
- Ability to work efficiently in a fast-paced kitchen environment.
- Good physical stamina and ability to stand for extended periods.
- Good command of spoken and written English.
- Flexible to work shifts, weekends, and public holidays as required.
