Job Purpose
Ensure high standards of food safety by monitoring and recording the temperatures of raw, cooked, and portioned foods. Report any discrepancies to senior department members, assist in preparing laboratory culture media, and track the temperatures of dishwashing machines and the disinfection levels of potable water.

Job Context
The role is crucial for maintaining food safety standards at EKFC through prescribed tests, scheduled inspections, and checks. The Hygiene function plays a vital role in EKFC’s 24/7 catering operation, ensuring that all company locations— including office areas, food premises, and equipment— meet safety standards. Additionally, the role encompasses overseeing the supply chain from raw material procurement to food production, ensuring it is food-safe and pest-free. Adherence to EKFC’s established Hygiene & Safety Standards, local government regulations, and airline customer requirements is essential.

Principal Accountabilities
Raw Food Safety: Monitor and record the temperatures of defrosting products to ensure safety.

Receiving Standards: Verify that the temperature of raw materials upon receipt complies with defined safety standards.

Food Portioning Monitoring: Track and document the temperature of food during portioning as it moves from Production to the Catering Department and during tray setting.

Cooked Food Safety: Oversee cooking and blast chilling times, along with temperatures for First, Business, Economy Class, and Special Meals, ensuring safety during portioning, tray setting, dispatching, and aircraft loading.

Water Safety Monitoring: Daily monitor and record chlorine levels in water to ensure they remain within safe limits.

Staff Appearance Inspection: Inspect staff appearance and report any deviations from established grooming standards to the Food Safety Officer.

Equipment Disinfection: Ensure proper disinfection of catering equipment by monitoring the temperature of hot water in the dishwashing machine.

Laboratory Equipment Sterilization: Oversee the cleaning and sterilization of glassware used for laboratory analysis.

Quality Compliance: Implement the Quality Policy and Quality System in line with ISO 9001:2000 standards, executing all responsibilities according to departmental work procedures and reflecting EKFC’s Quality Policy.

Knowledge, Skills, and Experience
Minimum Qualification: O or A level or equivalent, preferably with a background in science. Completion of intermediate-level Food Hygiene & Safety training and requisite on-the-job training is required.

Skills: Excellent communication skills, with fluency in English. Ability to work effectively in a team and organize personal workload efficiently.

Experience: At least 3 years of general experience in a similar role within a food production company.
